OS1097: Happy Sideways Holidays!

We all know the time between Christmas and New Years is hectic and busy and strange. With that in mind, the guys tackled all kinds of things and covered a bunch of different ground for the final episode of 2019. From the cool Christmas gifts everyone got to the top outdoors moment of the year, and some resolutions thrown in, it was a busy, busy show! WARNING: this thing got CRAZY sideways on us, so hold on to your hat while you are listening!

Here’s your Ring Power Cat tip of the week: Here are the best ways to take a good picture of a fish! Consider sun position, how to hold the fish and take pictures as soon as possible before the fish loses it color.

Here’s your Kirbyco Builders Inc. cooking tip of the week from KirbyCo himself: Christmas Tenderloin for Ten!

Season with McCormick Montreal Steak and Jack Daniels seasoning. Get your egg or grill to 600 degrees, sear the meat on all sides. Back temp down to 270, then, using an internal thermometer, take it off at 125 degrees and it will continue to cook, getting to 135 for medium rare (20 mins per pound for a perfect medium).

Best part of a tenderloin is it will feed a crowd…people who love medium well to medium rare!

Jeff was off on assignment with the Jaguars, so Moe’s Fishing Forecast co-host Capt. Scott Shank joined Capt. Kevin and Capt. Kirk once again to talk about everything happening in this touch-and-go time for everyone who loves the outdoors here on the First Coast.

Here’s your Ring Power CAT tip of the week: This is a great time of year to find reds in shallow water. If you have a boat or kayak that is capable of getting in a foot or two of water you need to go as far up a creek as possible! Your tackle needs to be light for stealth. A live shrimp or mud minnow is your best bet!

Here’s your KirbyCo Builders Inc cooking tip of the week: Thanks to OS listener and fan Mark Arnold for sharing!

Mark says, “Get rid of of all sinew and cut the backstrap against the grain in medallions a little larger than golf ball size. Mix either crushed or powder garlic with melted butter in sauce pan. Heat grill to around 450 and with a set of tongs dip each medallion in butter before placing on grill. Cook on each side about 2 minutes repeating dip in butter when turning. (the grill will flare up when placing the meat on it due to the butter but that’s the key to searing in the flavor) Take off grill, lightly pepper and serve immediately (this will give you a rare-medium steak that is to die for cook longer are your on risk of meat becoming chewy) Suggested side dishes collard greens, creamy grits and garlic rosemary potatoes served with a merlot or cab!

OS1094: The 2019 OS Christmas Extravaganza

The tradition continues! The whole gang got together, including hundreds of OS faithful, to spread some yuletide cheer at Ringpower for the 2019 OS Christmas Extravaganza! It was a big party with lots of fun for everyone, and it was a great show for sure. Merry Christmas!
