Fishing Forecast-January 29-The January Wrap-Up

It has been a crazy start to 2020…January has been a wild mix of weather and fishing! So the question is this: does the wackiness continue into February? Get the answer here, and try to figure out how Capt. Kevin got lost in a sea…of tires!

OS1101: LIVE From The Jacksonville Boat Show

Capt. Kevin and Jeff were out of the mix to handle some OSR, so Capt. Kirk took the helm and docked the show at the Prime Osborn Convention Center for the 2020 Jacksonville Boat Show! Surrounded by beautiful boats, Kirk chatted it up with Capt. Scott Shank and a very special guest, Dr. Dave Edwards from Cabin Bluff!

Here’s your L.V. Hiers gear tip of the week: It’s time for ALL boat maintenance and getting geared up for Spring. Check the trailer bearings, get an oil change, check the batteries, and definitely DO NOT FORGET to check those trailer tires for wear!

We use the late July thin and crispy tortilla chips (entire bag) spread out… top with meat of your choice (we used ground venison but rotisserie chicken is yummy too!) Make a homemade salsa of sweet onion, tomato, jalapeño, cilantro and lime juice the night before to sprinkle on the top of the meat (make sure you drain the salsa well before topping so it doesn’t make the chips soggy!) We also add more pickled jalapeños and then cover with a shredded Mexican cheese blend. Put in the oven on 350 for 20 mins or until cheese is melted. Enjoy!

OS1100: Closing Out the Season SIDEWAYS

For starters, Capt. Kirk was out…he stayed home to try to recover from the flu. So Capt. Kevin and Jeff handled the show this week, and spent some time wrapping up and reflecting on the season. However, because of the crazy weather, they couldn’t decide whether to talk more hunting or fishing! However, things went sideways IN A HURRY, and you will have to listen to the whole show to figure out if they ever got back on track!

Here’s your Kirby Co builders Inc cooking tip of the week: If you have garden fresh tomatoes like Jeff – here is one of the best ways to use them!  Easy Creamy Chicken Pasta Sauce: Use 1/4 cup of butter mixed with 1 tbsp minced garlic. Heat on medium… add in lots of chopped fresh garden tomatoes, jalapeño and sweet onion. (A can of medium rotel also works really well!) Stir until all are soft. Add in one whole rotisserie chicken shredded. Add 1 cup chicken stock. Cover and simmer for 5-10 minutes. Add one extra large jar of Rao’s tomato sauce. Combine and cover to cook two more minutes. Add 1 1/2 cups of heavy cream and 1/2 cup shredded Parmesan cheese. Let simmer for 5 minutes. Serve over pasta or rice.

OS1099: Switching Things Up

So what happens when Capt. Kirk and Jeff are BOTH out doing some OSR (Outdoors Show Research)? Capt. Kevin calls up his Moes Fishing Forecast co-host Capt. Scott Shank to join him. And then he calls the guy who fills in for him on the Forecast – Capt. Leon Dana! As you can imagine, there was a lot of fishing talk, and some crazy stories, too.
