Snapper Season is underway, which guarantees all kinds of silliness, and Capt. Kirk was in the middle of it! So Jeff and Capt. Kevin took the show on the road to Theramed Medical Clinic in Callahan. Jeff shared his stories about Telluride, CO, Kevin talked about snapper fever, and everyone chimed in about their favorite pair of work boots.

Captain Kevin says it’s going to be a crazy weekend at the boat ramps due to snapper season. Remember to be patient! Also… if it’s dark when you are launching – turn your headlights off and turn on your parking lights. That way you won’t blind the next guy trying to back down.
Jeff’s Crunchy Red Snapper
Filet fish into pieces (we like ours in strips), rinse and pat dry with paper towels. In a large bowl, combine a few heaping tablespoons of mayo and a squirt of yellow mustard. In another large bowl, combine panko bread crumbs, salt, pepper and finely shredded parmesan cheese. Coat the snapper in the mayo mix, then cover/coat in the panko mix and put on the copper crisper rack or a non stick cookie sheet. Bake in the oven at 425 until it’s super crispy! Enjoy!
